Minty Fresh Hawaiian Papaya Relish Recipe
If you need to find ways to sneak more fruits into your family's diet, try this tasty relish made from Hawaiian papayas that are full of vitamins, especially vitamin C. This papaya relish is a great condiment to serve with a fish, poultry or vegetarian main course meal.
Minty Fresh Hawaiian Papaya Relish Recipe
1 fresh Hawaiian papaya, de-seeded and finely diced
1 cup finely diced tomato
2 finely sliced green onions (scallions)
2 teaspoons finely diced red onions
2 teaspoons chopped fresh mint
Juice from 1/2 of a fresh lime
Chili peppers of your choice to taste
Salt to taste
Gently mix all of the ingredients together in a bowl. Refrigerate and serve chilled. Best eaten at one serving because the relish gets watery after a while.

I tried this recipe my daughter really loves it. I'm going to make it again this weekend on The Raw & The Cooked and my main website. I'll be linking to this post. I made a few mods but for the most part I followed this recipe. I feel proud I rarely use a recipe! ;-)
